Spanish Rice

This recipe is fairly easy to make. Total
time to make is about 20 minutes. This recipe makes a delicious
meat/tomato sauce to be poured over white rice. If using lean beef, this
is a very healthy, and tasty meal.
- 1.5 pounds of lean ground beef
- 2 (15 oz) cans of stewed tomatoes (Italian and
Mexican flavors from Dole works well)
- 1 15oz. can of tomato sauce (hunt's recommended)
- 1 medium sized onion
- 1 green pepper
- slice of American cheese (Velvita works too)
- 3/4 teaspoon salt
- 1 teaspoon minced garlic
- 2 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- serve above ingredients on white rice (4 cups)
- Chop onion and add to partially browned
beef along with garlic. When beef is nearly completely browned, add green pepper
(cut pepper into half inch squares). Continue browning beef on med heat
until onions are fully cooked (become translucent) and green pepper has cooked
for at least a few minutes. Drain meet if necessary.
- Add rest of ingredients except for slice of cheese. Allow sauce
to come back to a simmer.
- Add slice of cheese and stir into sauce, allowing cheese to melt.
- Prepare white rice. For simplicity, Kraft 5-minute rice works
fine.
Once ready, serve generous amounts of sauce over
rice in either bowl or plate. If you like spicy foods, adding a couple
shots of Tabasco sauce will give dish a little kick. Also, you may need to
add additional salt to recipe. Taste test for best results.
Makes 4-6 servings.
